Consider the Bison
Bison meat, for those who haven’t had it, is like grass-fed beef on steroids. It’s richly purple in color, deeply satisfying in taste. The flavor is closest to beef, yes, but has hints of lamb, of venison — not enough to be repellent to those who don’t eat adventurously, but just enough to intrigue the palate.
More people need to realize just how incredible of a health food bison is, and there’s no one better to talk about it than Lou and the wonderful people from North Bridger Bison, who do regenerative agriculture the right way in the Shields Valley of Montana.

The Zinc Deficiency Problem
Zinc and copper have an antagonistic relationship in the body. When tissue zinc levels are inadequate, copper tends to accumulate. Conversely, as one mineral’s level rises, the other typically decreases.

A Golden Light
Although we ought to make ourselves good guests in a new place, the attempt to control our experience is sure to stifle it. We cannot squeeze meaning out of trip. We cannot force events to align with our expectations and desires. This not only leads to disappointment when things go awry, but it also limits our travel to the narrow confides of what we think we want.

Aesthetic feasting is my love language. When I invite those that I love into my home and to my table, it is guaranteed to be curated within an inch of its life. And tonight was no exception. From the bubbling over lasagna in the perfect 1950’s casserole dish that I hunted down in an antiques mall, to the hand-painted menu cards and pops of red and sky blue in the tablescape, this night was going to be an absolute Italian dream.
❋ Extremely rare—and sacred—white buffalo calf born in Yellowstone
“There are prophecies about white buffalo calves being born at a time of great change,” says Jason Baldes, a member of the Eastern Shoshone tribe and executive director of the Wind River Tribal Buffalo Initiative. “We have stories of the Eastern Shoshone people hunting and pursuing white bison or white buffalo from well over a century ago.”
(At long last, the American buffalo has come home.)
Buffalo used to roam from Alaska to Mexico and number between 30 to 60 million. Although that population was driven down to just 325 animals by 1884, scientists and conservationists have since rescued bison from the brink of extinction. But most of the 30,000 buffalo that exist today aren’t as free or as wild as you might think.
❋ My Italian Themed Birthday Lunch (& How I Made It!)
I really wanted to give a seaside Italian holiday vibe with a touch of playfulness, so I decided to make the personalised tablecloth the centre for the design. I’ve also been wanting to make wavy napkins for a long time using my cricut, so I decided this was the perfect time. To top it off, I decided to use my favourite etching cream hack to personalise some glassware.
Recently I listened to a podcast about Hermès, and if you’re anything like me you’ll find the story incredibly inspiring. See, to this day Hermès is one of the few luxury houses that hasn’t yet been absorbed by LVMH. It’s stuck to its artisanal roots, and even most of the ownership is still kept within the family. We always hear people talk about generational wealth, but if there’s one family who did it the right way it’s the Hermès-Dumas empire. I find it fascinating how they had a handful of incredibly relentless men born in subsequent generations to take them through some of the most prosperous times in human history.
