Regarding duck fat, how important is the diet the ducks are fed? Grain-heavy diets can lower the fat quality of the bird.

Yes as with all animals the diet the animal is fed is incredibly important - with duck fat however there isn't really a gold standard to look for label wise. Look at price and do a quick google search on the brand to see if they leave any information about their farming practices.

Always visually inspect the duck fat itself. It shouldn't be white. Shouldn't be green. It should always be a light yellow and creamy when softened. You shouldn't see any impurities in the fat itself. There shouldn't be a strong gamey smell as well.
