Usually in Italy, especially during Christmas (but also every time we do the broth), we eat the meat (called lesso or bollito, it depends on the extraction time) and some of the vegetables used for the broth :)
Mmmm… broth… I finish the broth in the oven set below boiling temp—after a fire in the kitchen when I fell asleep with the broth pot on the gas burner. The water cooked off completely and the solids burned anaerobically, producing a flammable gas, until the pot literally exploded, blowing the door off the microwave oven just above the range. (My dog saved the day when she pushed my bedroom door open and woke me.)
In an oven set to around 200F, this will never happen, even if all the water evaporates. As an added safety provision, I set the cooking timer to turn off the oven around bedtime.

I use a crockpot on low and give it 24 to 48 hours. Keep taking fresh hot broth and replacing bones.
