Cheese is a miracle. It’s truly the ultimate version of dairy. It’s where milk goes to heaven and lives forever. It’s magical how we live in a world full of such an INCREDIBLE variety cheese. There’s nothing quite like enjoying a selection of fine cheese on an amazing fall afternoon. So many different textures, an unlimited number of permutations to enjoy. How blessed are we?
If you can’t stomach milk, you need cheese. It’s the easiest way to get calcium in. Grate Parmigiano Reggiano over your eggs. Melt aged cheddar in your burgers. Nibble on some roquefort. Enjoy some herb gouda. Cheese is essential.

In New York, some of the most impressive buildings are also the quietest. They are grand, often window-shaded structures with no name on the door, existing as silent holdouts from a bygone era. These are the city’s private members’ clubs.
Founded in the 19th century, they were built as sanctuaries for the new elite. Long before Core Club or Zero Bond, these were the original “third spaces” – private spheres between home and office where members dine, connect, and conduct business.
But what’s really going on inside? More than just a quiet bar, these clubs are often comprehensive social worlds. They feature stunning libraries, private athletic facilities, formal dining rooms, guest suites, and even barbershops. They’re a carefully curated bubble for members.
A hint of Calvados elevates these fruit candies from child’s play to adult treats. We used unsweetened applesauce in place of fresh fruit concentrate for both texture and flavor. These are much easier than they look. Once you get the hang of it, experiment with your favorite flavors. Fruit gelée base recipe adapted from Cooking Light.
